Cannabis Peanut Butter Sandwich Cookies

March 1st is National Peanut Butter Lover's Day! (I love all of these food holidays) We're celebrating with a cannabis version of one of my favorite Girl Scout Cookies, Do-Si-Dos!

Ingredients

For the cookies

  • 1/2 cup unsalted butter softened
  • 1 tablespoon cannabis butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 egg
  • 1 cup quick cook oats
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

For the filling

  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter softened
  • 1 1/2 cups powdered sugar
  • 1 tablespoon milk

Instructions

  • Preheat oven to 350 F
  • In a medium-sized mixing bowl, combine the oats, flour, baking soda and salt. Whisk together and set aside.
  • In a large mixing bowl, cream together the unsalted butter, cannabis butter, peanut butter and sugars until fluffy. Add vanilla and egg and mix well.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Drop dough by the tablespoon about 2 inches apart on a baking sheet lined with parchment paper.
  • Bake for 10 minutes or until edges turn golden brown.
  • Once the cookies are done baking, move them to a wire rack to cool.
  • For the peanut butter filling, mix together all ingredients until well combined.
  • Spread 1 tablespoon of filling on the backside of one cookie. Top with another cookie and press down gently.

Notes

Makes 15 cookie sandwiches. 1 dose = 1 cookie sandwich.
