Cannabis Molasses Cookie Cups

Baking these molasses cookies in a mini muffin tin turns them into the perfect little cups to fill with ice cream, cheesecake, frosting, you name it.

Ingredients

  • 2 1/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter softened
  • 3 tablespoons cannabis butter softened
  • 1 egg room temperature
  • granulated sugar for decorating

Instructions

  • Preheat oven to 375°F.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt.
  • Using an electric mixer with the paddle attachment, or a hand mixer beat the brown sugar and butters on medium speed for about 5 minutes until light and fluffy.
  • Turn the mixer to low speed and add the egg and the molasses.
  • With the mixer still on low, slowly add the dry ingredients and mix until combined.
  • Scoop one tablespoon of dough into each cup of an ungreased muffin tin. (There is enough butter in the dough to keep the cookies from sticking). Gently press the cookie dough balls into each cup making an even layer and sprinkle with sugar.
  • Bake for 10-12 minutes or until the cookies are slightly brown on top.
