Mini Peach Cobbler

These single serve peach cobblers are fresh and perfect for summer!

Equipment

Ingredients

For the peaches:

  • 1 diced peach approximately 1 cup (peel if desired)
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt

For the batter:

  • 4 Tablespoons butter total, melted - I'm substituting 1 T of cannabis butter
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • ground cinnamon
  • brown sugar

Instructions

  • Preheat oven to 375°F and line a muffin tin with cupcake liners.
  • Add the diced peaches, sugar and salt to a saucepan over medium heat, stirring occasionally until the sugar is dissolved. Remove from heat and set aside.
  • Add 1 teaspoon melted butter to the bottom of each muffin cup.
  • In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Put 2 tablespoons of batter inside each cupcake liner, on top of the melted butter.
  • Divide diced peaches and syrup evenly on top of the batter in each tin, approximately 1 tablespoon each. Sprinkle cinnamon and brown sugar generously over the top.
  • Bake for 15-20 minutes until tops begin to brown. Serve warm, with a scoop of vanilla ice cream!

Notes

I personally like my peach cobbler with vanilla ice cream, but whipped cream is also a fantastic choice. You can also substitute the fruit for apples, berries, plums, apricots, basically any fruit!
