These single serve peach cobblers are fresh and perfect for summer!

Ingredients
For the peaches:
1diced peachapproximately 1 cup (peel if desired)
1/4cupgranulated sugar
1/4teaspoonsalt
For the batter:
4Tablespoonsbuttertotal, melted - I'm substituting 1 T of cannabis butter
1cupall-purpose flour
1/2cupgranulated sugar
1teaspoonbaking powder
1/4teaspoonsalt
3/4cupmilk
ground cinnamon
brown sugar
Instructions
Preheat oven to 375°F and line a muffin tin with cupcake liners.
Add the diced peaches, sugar and salt to a saucepan over medium heat, stirring occasionally until the sugar is dissolved. Remove from heat and set aside.
Add 1 teaspoon melted butter to the bottom of each muffin cup.
In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Put 2 tablespoons of batter inside each cupcake liner, on top of the melted butter.
Divide diced peaches and syrup evenly on top of the batter in each tin, approximately 1 tablespoon each. Sprinkle cinnamon and brown sugar generously over the top.
Bake for 15-20 minutes until tops begin to brown. Serve warm, with a scoop of vanilla ice cream!
I personally like my peach cobbler with vanilla ice cream, but whipped cream is also a fantastic choice. You can also substitute the fruit for apples, berries, plums, apricots, basically any fruit!
